Initially gifted with the unchallenging task of plating rice for each table, Chef Max Jermsurawong of Thai chef Ian Kittichai’s Cuisine Concepts company, who was doing a stage (an unpaid stint at a restaurant to gain experience), was delighted to soon find himself in the hot section, saucing and plating the main meat dish of pork alongside Chef Thomas.
