Chef Tomas and Chef Chris look over the first version of the menu (left). Used to working under extreme pressure at Noma, the chefs decided on an ambitious 16 dish menu. A visibly exhausted Chef Thomas checks his prep list (right). Both he and Chef Beau averaged three hours sleep a night while at Nahm. “I can sleep on the next plane”, he said. Despite the stress and tension in the kitchen to get through the prep, both visiting chefs never once lost their cool the whole time they were in the kitchen. “They were consummate professionals from the time they walked in the door until the time they left”, said Chef Chris.
